ABC... Perfect for the Summer..

Apple Berry Cooler to beat the this summer. Summer is starting to set its trail and the heat is just beginning to show its true colours and I absolutely love it.

People will think that I am crazy but its true, I do love summers as it is time to enjoy nature's edible gifts to us... tender coconuts, ice apples, sugarcane juice, water melons , juicy mangoes etc.

All the stalls exhibit the bountiful produce and their aromas fill the air. I know it that the summers are hot but it is a very welcoming change to the cold weather, nose sniffles, icy winds and warming fire.

The best way to beat summer is to have natural foods meaning more of fresh fruits and veggies.

First on the list is this "ABC" meaning "Apple Berry Cooler"...:)

This drink is incredibly easy to make and pleases everyone .... A perfect combination of sweet apples and slightly tingly flavoured raspberries. All you need to do is to get the fresh berries, puree it, refrigerate the puree and ready-made apple juice until it is time to serve.

Preparation time:10 mins
Serves: 6-8 members depending on the glass size.

For the drink:
Raspberries: 100 -150 gms
Ready-made apple juice: 2 litres.
Ice cubes : as required.

For garnish:
Fresh raspberries: 3 for each glass - if you are going to serve 6 members then you will need around 18 raspberries.

1. Gently rinse the raspberries in clean water.
2.Puree the cleaned raspberries until smooth and refrigerate until serving time.
3.Take the serving glass and carefully place 2-3 tbsp of raspberry puree in the bottom of the glass. You will need a long handled spoon if you are using a tall glass as in the picture.

4.Pour the apple juice very gently preferably through the sides of the glass by gently tilting the glass and straighten the glass as it gets full.
5.Add ice cubes.
6.Thread the raspberries 3 in each tooth-pick and place on top of the glass as garnish.

Serve immediately with a long spoon to mix and enjoy the flavours...

Note: You can substitute any sort of berries instead of raspberries or you can even use peach or fresh apricot puree instead of the berries. I love the slightly sour tingly flavour of the berries. You can add 1-2 tbsp of icing sugar to the puree to sweeten it a little bit.

Enjoy...
