You know it is quite difficult to keep up the vegetable intake required for the daily requirement in the diet .... U know I really try very hard, honestly!!!!
But even then I miss out on eating healthy, end up going out and buying unhealthy junk and ready made foods...
Not good for health and of course on the pocket!!!!
No matter how much care you take to prepare the right amount of food for a small family of three, there are always leftovers...
So to tackle all the above tragedies : Diet devoid of veggie, buying unhealthy lunches, overspending on daily meals and to use up left overs... here is a simple idea:)
This recipe does not involve a lot of hard work nor it is time consuming... I made this with some left over pasta from yesterday's dinner.
I prefer to use home made tomato sauce: for the recipe please visit this link
Cooked pasta: 1 cup
Tomato sauce: 1/2 cup [ preferably home made or store brought]
Bell peppers [any colour]: 1-2
Shredded mozzarella: 1/2 cup
Fresh basil leaves: a handful.
Oil: 1 teaspoon
1.Heat oven to 140 degrees [fan assisted] or gas mark 4.
2.Apply a coating of oil on a baking tray. Wash and quarter the bell peppers.
3.Mix the cooked pasta with the tomato sauce and fill in the bell pepper quarters.
4.Sprinkle with shredded cheese and top with a basil leaf.
5.Bake for 10-12 minutes until cheese is melted.
6.Garnish with more fresh basil leaves and enjoy.
Note: You can add cooked shredded chicken or prawn /cooke veggies to the pasta to make it more healthy. Just heat through before eating.
