Wow I can't believe it is time for me to post a wonderful recipe from a lovely guest blogger for the "Friendship Chain". As we all know this series was started by Anamika of Taste Junction . It has a lovely theme where a recipe from a guest blogger of the host's choice is featured in the host's blog. Then the guest blogger becomes the host of the event for the next 15 days.
Now it is my time to feature my lovely friend's post in my blog. She is non other than Dhyuthi from Mélange . What I like the best about her is first of all is her name - Dhyuthi means bright light..the vibrancy and sharpness as seen in lightning .... It's sanskrit.
Second I am absolutely amazed by her passion in cooking and blogging which is reflected in each one of her posts.... Beautiful blog I must say.

Kinnathada, a luscious snack we prepare in North Kerala during the auspicious festival of Vishu. Being the Malayalee New Year,Vishu is always celebrated in a superlative manner especially in the central and northern part of the region.
Apart from Vishukkani (auspicious first sight the members of the family see in the new year morning) and Vishukkainettam(the coins/money been gifted by the Karanavar/eldest person in the family to the youngsters as a blessing to kick-start a prosperous New Year), scrumptious sadya and numerous delectable snacks specially designed for the occasion turns the day to a pure festival of abundance !

The one I am going to present today, Kinnathada, is a snack we usually prepare for Vishu evenings. It can be called as Kerala’s layered sweet cake since it’s been baked or steamed in layers.
After the much heavier Sadya in the afternoon, it’s a practice among the members of the family and the guests to gather in the long verandah and munch some special snacks, chatting and gossiping over tons of subjects.
Here is the recipe of this much cherished snack, Kinnathada…
Ingredients :
4 heaped cups of Ponni Rice (you may use Basmati as well)
1 heaped cup of Gram dal (kadalapparippu)
1.5 cups thick coconut milk
1.5 cups thin coconut milk
1.5 cups sugar (You may increase. Mine is considerably moderate)
Handful of cashews and raisins to garnish
Ghee as needed
Method:
1.Clean,wash and soak the rice in water overnight or 6-7
hours.
2.Wash and soak gram dal in water for half an hour.
3.Pressure cook this adding only enough water to cook.
4.Pressure cook till the gram is soft and cooked well.
5.After the first whistle, you may reduce the flame and
cook for another 10 minutes.
6.Now grind the soaked rice in a food processor/mixer adding thick coconut milk.
7.You may add little by little. Now grind the cooked gram
dal adding thin coconut milk slowly.
8.Mix them both well. The batter should be bit looser than dosa batter.
9.Mix in sugar to the batter and keep it closed for half an
hour.
10.Now place a plate in steamer and grease with ghee.
11.Pour spoonful of batter to the plate and put some
cashews and raisins over.
12.Steam it and when it’s cooked pour another spoonful.
13.Repeat this procedure till the batter finishes. Finally
decorate with cashews and raisins.
*You may bake this as well. Preheat the oven to 180 degree and then make the layers
and bake !
