Healing Foods Event Announcement

Hi buddies,
I am so excited to announce that I would be guest hosting "Healing Food Event"- brain child of  Siri of  http://www.cookingwithsiri.com  for the month of April . Can you guess what the theme is ....????? Yes , yes , yes ... it is "Mango". What better way to welcome and celebrate summer other than with mangoes..

A word about mangoes :
It is indigenous to the Indian subcontinent. The mango tree is the "National Tree of India". It is basically a tropical fruit tree and belongs to the genus Mangifera which has numerous subspecies.
In Hindu culture its fruits and leaves are used religious and marriage ceremonies. A perfectly ripe mango held by Lord Ganesha [Vinayagar] symbolises attainment and perfection . The mango blossoms are used to worship Goddess Saraswathi.
In Tamilian culture, mango is one of the three major fruits which have both religious and nutritional value. They are collectively refered to as "Mukkani" - meaning "Three fruits"-"Maa, Palaa, Vaazhai" [Mango, Jackfruit and Banana].

The word "Mango" is thought to be derived from the malayalam word "Manga" which inturn comes from the portugese word "Manga"- refers to mangoes. The fruits are available only during summers. The ripe fruit is yellowish orange in colour with a single seed inside it. The size and the flavour varies with the variety of the fruit.
The fruit is rich in Vit A and C, dietary fiber and phytochemicals. It also contains good levels of minerals and amino acids. The peel of the ripe fruit contains antioxidant pigments and carotenoids.
