I am not that very keen on "Valentine's Day" nor the "mushy love things" .... even though mine was a "love marriage" by all means. Me and my hubby were classmates at medical college, were friends for 4 years and then decided to get married ... My friends often ask me what our love story was and how it happened.
Truly speaking I don't remember we ever saying the "ILU" to each other at the beginning or even now..... All he asked me was wether we can share our lives together [later he confessed that he was scared about how I would react...!!!] and I said "Yes".
Love is expressed through small every day gestures - and some emotions need no words to be expressed or felt.... This is my humble opinion but that doesn't mean I forego the presents on special ocassions :):):)
I wanted to post something on that day but was busy. I wanted to try this recipe for a long time. Usually strawberries take the first place for dipping in chocolate but my choice is cherries.... the smooth texture, its red luscious colour, the sweet flavour sets it apart from the rest.
I had some left over double cream .... combining both worked very well. It was sure fidgety to eat but thoroughly enjoyed it....
Chocolate dipped Cherries:
Ripe cherries [along with the stalk]: 10-12
Dark chocolate drops: a handful.
Parchment paper: 15 cms / 15 cms piece
1.Wash the cherries and wipe them clean and dry.
2.Place a heat proof bowl with the chocolate drops on a pan of boiling water. The bottom of the bowl should not touch the water.
3.Melt the chocolate drops until u have a smooth sauce. Put off the flame. Let the bowl remain on the pan to keep the sauce warm until u have done with the coating.
4.Dip each cherry in this sauce well so that all the sides are well coated. Gently swirl the cherry.
5.Work quickly until all the cherries are done.
6.Place on the parchment paper. Chill for about 10 mins for the chocolate to harden.
Serve with rose cream.
Rose flavoured cream
Plain whipped cream wouldn't be nice, isn't it...!!!! What can be added which gives the colour, aroma and flavour to the cream and also comes first in kindling the love mood ...... Aaha..!!! thats it - ROSE
Be careful when adding colour. Add a few drops, mix well and wait for 1-2 minutes to see the intensity of the shade. Add more colour only if needed. The addition of condensed milk gives a lovely mild mellow sweetness. Add 2 tbsp of condensed milk , check for sweetness and add more only if needed.
Double cream:100 ml.
Condensed milk: 2-3 tbsp.
Rose water : 1-2 tsp.
Rose food colouring: few drops.
1.Whip the double cream until u get a soft whipped cream.
2.Add the condensed milk and rose water and whip for a few more seconds until everything is well combined.
3.Add the rose food colouring and gently mix with a spoon. The cream should be light pink in colour.
To assemble:
Pipe a little cream on a decorative plate/readymade small tart case/chocolate cups. Place a chocolate dipped cherry on top. Serve with lots of love....
Note: I made the chocolate sauce without any butter. Hence it does not have a shine when it dries up.It forms a hard coat which I liked.
If u want add 1-2 tsp of melted butter to get a shiny gloss finish and to soften the chocolate coating a little.
Try using white chocolate instead of dark and also vary the flavours added to the cream. U can add icing sugar instead of condensed milk.
