Banbury Cakes

Banbury cakes are not really cakes but they are something like the vegetable/egg puffs that we get an Indian bakery, except that it has a sweet filling. It is very easy to make and tastes very very nice. This is usually eaten as a snack, either hot or cold....


All u need is puff pastry and a few other ingredients to make this delicious treats...

I used around 375gms of ready rolled pastry and reduced the amount of raisins and butter as mentioned in the original recipe. I didn't have any orange peel, so I used candied mixed peel [orange and lemon peel mixed].


Ready rolled pastry: 375gms
Butter: 30 gms.
Raisins: 70 gms
Cinnamon powder: 1/4 tsp.
Nutmeg powder: 1/4 tsp.
Honey: 1 tbsp.
Candied mixed peel: 1 tbsp.


For glaze:
Egg white: 1.
Caster sugar: 2 tsp.

1.Preheat the oven to 180 degrees/160 degrees fan/ Gas Mark 4.
2.Dust with flour and roll the pastry to the thickness of one rupee coin.
3.Soften the butter. Mix the raisins, cinnamon powder, nutmeg powder, honey and candied mixed peel with the butter.


4.Cut out circles around 10 cms in diameter.
5.Place a teaspoon of the filling in the centre of the cut out circle.
6.Close the edges of the puff. Place the puffs upside down and roll them lightly to flatten them  as shown in the photograph.


7.Brush with egg white and sprinkle with sugar
8.Place the puffs slightly apart and place in the oven for 25-30 minutes in the middle rack.
9.Cook until crispy and golden brown.
10.Transfer onto a wire rack and cool slightly.


Serve either warm or cold.
