Just as exotic as the name is, these green idlis tastes wonderful.... and the unusual combination is like a punch ...:) Really refreshing..
Idli batter: 4 cups.
Fresh mint leaves: 1 small bunch.
Ginger: 1 inch piece.
Curry leaves: 4 sprigs.
Green chillies: 2-3.
Soda bicarbonate: 1/4 tsp.
Salt: to taste.
1.Remove the mint and curry leaves from their stalks and wash along with the ginger and green chillies.
2.Grind to a smooth paste.
3.Mix with the idli batter along with soda bicarb and salt.
4. If the batter is too thin, add 1-2 tbsp of fine rava and soak for 15 mins.
5. Pour on idli plates and steam for 10-12 mins.

Green Mango Chutney:
Green mango [large, chop to pieces along with the skin]: 1
Grated coconut: 3 tbsp.
Green chillies: 3.
Fresh ginger [grated]: 1/2 inch piece.
Urad dhal:1 tbsp.
Salt: to taste.
To temper:
Mustard seeds: 1/2tsp.
Black sesame seeds: 1/2 tsp.
Asafoetida powder: 1/4 tsp.
Curry leaves: 1 sprig.
Gingelly oil: 2 tsp.
1.In a tsp of oil gently roast urad dhal for 2 minutes. Add the mango pieces, coconut, grated ginger and green chillies and roast for 5-6 mins on medium flame.
2.Cool and grind to a smooth paste.
3.Splutter the mustard seeds, black sesame seeds, curry leaves and asafoetida powder .
4.Add to the chutney. Add salt and mix well.
Serve along with the mint ginger idlis.....
Note: The mango should be sour for the flavour to come through. I prefer to use the mango with the skin but U can peel the skin if u want. The contrast of taste between the ginger and sour raw mango is fantastic and hey!!!!! If U don't believe me.....try it, please....
