I was apprehensive to making cookies in the first place but they tasted super. The oats gives a chewy consistency and they are just so yum...
The first time I went by this recipe as such but the second time, I did not have orange juice. So I used apple juice instead and I could not make out any major difference in taste.
Rolled oats: 55 gms.
Raisins: 55 gms.
Hazelnuts [chopped]: 55 gms.
Butter: 225 gms + extra for greasing.
Plain flour: 225 gms.
Orange Juice: 125 ml.
Caster sugar: 140 gms.
Egg yolk [lightly beaten]: 1
Vanilla essence: 2 tsp.
Salt: 1 pinch.
1.Preheat the oven to 190 degrees/ 375 degrees F/ Gas mark 5. Grease two baking sheets and line with baking paper.
2.Mix the raisins and orange juice and soak for 30 mins. Sift together flour and salt.
3.In a bowl mix the butter and sugar with a wooden spoon.
4.Beat in the egg yolk and vanilla extract. Add the flour and salt mix, oats and chopped hazelnuts.
5.Drain the raisins, add to the above mix and combine thoroughly.
6.Dollop tablespoons of this mix onto the baking tray. Keep them well spaced and flatten slightly.
7.Bake them in the preheated oven for 12-15 mins until golden brown.
8.Cool for 5-10 mins on the baking sheets. Carefully transfer the cookies onto wire racks to cool completely.
9.Store in air tight containers.
