Mini Poppadams with Melon Salsa
Serves:4-5 people.
Prep time: 15 mins.
Cooking time.10 mins
Mini poppadams: 20.
Red onion [small-chopped] : 1.
Tomato [medium, deseeded & chopped] : 1.
Cucumber [chopped] : 1 cup.
Honeydew Melon [ peeled &chopped]: 1 cup.
Lime juice : 2 tsp.
Coriander leaves [handful]: chopped.
Salt: to taste.
To garnish:
Mango chutney, Yogurt and Mint leaves.
How to assemble:
1.Mix all the ingredients and refrigerate for 10 mins.
2.Place 1-2 teaspoonful of salsa on each poppadam.
3.Top with 1/4 teaspoon of mango chutney,1/4 teaspoonful of yogurt and garnish with a mint leaf.
Serve immediately.
Note: The mini poppadoms are store brought. You can use ready made ones or just fry some at home or better still dry fry them directly on flame. You can add mangoes, peaches or even kiwis to the salsa to make a punch. This is super healthy and super easy.
